Bits & Pieces

Wow. It's been a while guys. I have been spending a lot of time away from my official home front and kitchen. Instead I've been keeping my gramps company on the West side of the Mitten. While I have no aversion to small kitchens I do like to remain on good terms with my PaPa. One way I do that is by not making a "mess" in his kitchen. So my baking and kitschen adventures haven't been as frequent as of late. But, being in the city of rapids has allowed me to do some foodie exploring! So without further chitter chatter here's a little bit of what I've been up to this past month-ish.

Back in February I planned on sending Valentine's packages to people. I did... for the most part. But two of my favorite ladies didn't get their packages due to life (it's a biotch sometimes). I was able to make it up to them by sending some spring sweets.

I have gotten over me fear of yeast but sometimes a lady just wants some bread... quick like. So I looked through my bookmarks and found a recipe for a mocha swirl quick bread. Then I pulled out my favorite peanut butter cookie recipe and made a batch of those too. I have been really into giant cookies lately so I made those suckers BIG. I portioned them out with a 1/4 measuring cup!

 The basic ingredients....

 Mmmm batter....

Divide and add the mocha to one part.

Checkerboard the batter into the loaf pan and make it swirl.

All boxed up and ready to go! Of course I had to add a ribbon.

After mailing out those goodies I hopped into the car and drove to Beer City! No. I do not have any pictures of breweries- although I have gone to a few. But I did find a nice coffee and tea place where I can use wifi and get my daily dose of fancy caffeine.

The behemoth and a chocolate croissant at
The Sparrows Coffee Tea and Newsstand in GR.

Another day I used my handy dandy Yelp app to find a place that sold pho. Have I told you how much I like a good soup? Pho is harty! And it's a party in my mouth. I am not a fan of beef tendons and tripe so I played it safe and got pho ga. I know! All the foodie purist are booing me right now. But I know what I will and won't eat. So that leaves more for you!

An un-pho-gettable meal at Pho Anh Trang.

Over the weekend I took some time to head back to the Deuce for some quality time with friends. I also had some bizness to take of. A lady be busy ya'll! While in A2 I made my usual stop for some supplies at Trader Joe's. While there I scored a new favorite....

Sweet Potato Tots!
Dip them in a little whipped cream cheese with honey and cinnamon.

When I got back to GR it was right around Easter... this meant a big family dinner. Luckily I was only in charge of bringing a side. I ended up making a dessert and some cornbread. Who doesn't like cornbread?

What makes my cornbread different? I add cinnamon into the batter.
Also everyone knows buttermilk is key.

The other secret? A caste iron skillet!
This one is my grandmothers... clutch inheritance.

Into a hot pan and then the oven. Bake approx. 20min.

This is a leftover piece... I broiled some salmon and seasoned
some asparagus w/ red pepper flakes, soy sauce, garlic, and
a little sugar for dinner the following night.

The good times just kept rolling! I was lucky enough to hangout with my favorite power couple... The Hoekstra/Kidder couple. They've shown up in posts before, usually when I welcome myself into their home in Chicago. Being enablers of my fancy donut fetish I had to bring them some local flavors. In an alt-monthly I read about a newer place in Ada called Suburba.... It's a small eatery with some good food and even better donuts according to the word on the street. The donuts are only on sale Saturday mornings and are a first come first serve thing. I woke up that Saturday as a woman on a mission and can I just say.... mission accomplished!

 Too cute signage!

A trio of donuts and a scone.
2 Samoa donuts and a pink hibiscus fluff glazed donut.

Next week I'll be exploring Beer City even more! I will be attending the Doom! release at Founder's downtown. I will try to remember to take pictures so I can gloat share with you all. Happy eats!

Beer Fest

I have an awesome friend. She works for the Michigan Brewers Guild. She has a really funny husband who also enjoys beer. I have another friend who was willing to drive 2+ hours to go drink tasty craft beer. All of these people came together for a day of fun in the Grand Rapids area. Sometimes things come together and make life wonderful.

Anyone who's been to any event based around beer drinking- be it a Superbowl party or  the opening of the latest brew pub- knows that having good salty snacks is helpful. A favorite of many a beer festival goer is the pretzel necklace. For many this DIY treat is created by stringing pretzel twists onto some twine. I took things a step further an made pretzels to use in my necklaces. I used Alton Brown's recipe for my savory sticks. I didn't even need to double the recipe - I needed 4 necklaces- since I was making "sticks" instead of twists.

Some of the basics... yeast not pictured.

 The yeast in bloom....

After adding the dry ingredients let the dough rise for 2 hrs. I learned somewhere that the best place to let dough rise is in your oven with just the oven light on. It's a warm dry place where the yeast likes to party. I now do this every time I make a yeast dough and it hasn't failed me (yet). Once the dough has just about doubled in size take it out and knead it till smooth.

Portioned into 4 small balls to be rolled into ropes.

I rolled each ball into a 18 inch rope, cut into 4 pieces and
used a pipping tip to punch holes in one end.

This is a mixture of baking soda and water.
Apparently boiling the dough in it gives the pretzels their signature taste.

I baked the pretzels for about 12 minutes in the oven and everything came out golden!

Pre-drilling holes into the pretzel rods made assembling the necklaces a breeze! Just cut some twine and hang them pretzels on down the line. [Ugh, I'd never make it as a rapper].

Here's some pictures of us Beer Festin' in action!

This is me fake smiling as I try to get a picture of my necklace.
How uncomfortable I look.

 Cold day+cold beer=warm fuzzies.

Will and Raj enjoy some beer while not enjoying my use of the camera phone.

Cuh-razie beer flavors! This was my 2nd favorite of the day.

Shannon and I are friends because she puts up with my odd behavior.

This is towards the end of beer fest so we were all a little slap happy.

Do Me Right...

...and I'll treat you better than you ever had before. I think that's the chorus of a Slackers song. It's Valentine's day mofos! I may be single but I still like to play cupid and spread a little love. It's my personal assault on the holiday industrial complex. In the name of Saint Valentine I'mma make a massackery (massacre+mockery) of V-day being all about couples.

As usual I began combing the interwebs for DIY crafty projects to make/bake and include in my Valentine packages early... Like the beginning of January. I needed things that were both foodie and kid friendly. I made 2 sets of V-day treats. One for my nieces/nephews and another for friends.I found quite a few kid Valentines I liked online.

In the end I chose (surprise!) the punny (funny+pun) one. As my nieces and nephews get older I am finding it hard to transition the crafts I make them for them into more age appropriate things. Small tchotskes no longer really cut it, so the animal bracelet valentines were out. I wanted something a bit more gender neutral so the Lego jewelery valentines were nixed. That left the mustache and funny valentines... I chose the funny valentines because ALL kids love a good fart joke! I couldn't find mini-whoopie cushions at my local dollar store. So I bought regular sized ones and made do.

FLAVOR BUTTONS

I saw this instructable for not-Altoids online. The whole process was so easy! How could I not take half a day hunched over a counter top and making these little pieces of sweetness? I'm hesitant to call them mints since they don't really have mint flavors...except for one. I chose 2 foodie and 2 kid friendly flavors:
  • red licorice
  • cola
  • mint chocolate chip
  • mango

The basics: gum paste, candy flavoring, food coloring.

 My "special" tool- a straw.

15 minutes later I had one flavor all punched out.

This heart is full of flavor!

Kids' mix: flavor buttons, funny valentine and crispy chocolate wafer cookies.

COFFEE LOLLIPOPS

Hard candy... I've been wanting to make gourmet lollies for a while. The first time I burnt the sugar and had to scratch the whole batch. I then took the time to test my candy thermometer and found out it was 50 degrees off! With this mental note in mind I gathered together some sugar and tried it all again.  Sprinkle Bakes has a lot of fun with sugar recipes and this is one of them.

Ingredients: instant coffee, vanilla, corn syrup, cocoa, cinnamon, sugar and water.

Clip the thermometer to the edge of the pot and wait....

Once the mixture reaches 290 take it off the heat, add vanilla and pour into molds.

Having a good  candy thermometer is the key! Also, I like to think making hard sugar candy is kind of like BBQing. Low and slow is the way to go. I started my mixture on medium heat and gradually cranked it up to a boil. I was wary of everything boiling over, making a mess, burning or melting my skin off. It takes a bit of time but keeping your eyes on the prize (and the thermometer) is worth it.

Friends' packages included these lollies, some flavor buttons and those crispy chocolate wafer cookies. My momma also didn't raise no fool so I included a hand written note too. Both the friend and kid packages got wrapped up assembly line style and shipped out.

A paper bag... simple and classic!

ME MUM

Who's my greatest love of all? My mother of course! She birthed me. What's a greater gift than that? I love my mom lots and sometimes I want to give her more than a hug. She's a busy lady and it can be hard for her to take the time to do something she wants to do. I spotted a great Valentines day deal on Travelzoo and conspired with my siblings to get it for our mother. The voucher was for a massage with wine and chocolate! The sad thing about online vouchers is there's really no tactile opening experience. So I got out my craft crate and made something for her to open. I've seen similar set ups used for save-the-date/wedding announcements. Kelly over at Studio DIY even took the idea and put it in a box (literally).

Stuff: glue stick, scissors (not pictures), hole punches, alpha stamps, bakers twine.

I cut out some ID card sized pieces of white card stock. The 1st included a "dear mom we love you lots" message. The 2nd were the details of her massage voucher. Finally the 3rd promised a ride to said spa and dinner after. I strung the cards/tags on the bakers twine and some craft punched holes to make a garland. I taped one end into the envelope and carefully layered it all in. I used some double sided tape to keep the pull-tab of the garland separate to make it easier to pull it out.

 Partially assembles product.

 Electronic voucher in an envelope!

That's how I do Valentine's Day. What about you?

Tailgate!

The Superbowl... It's a party right? I'm not a sports fan at all. I don't know any of the rules of football. But, I do love hanging out and having tapas! That's what a Superbowl party is right? Snacks=tapas? That's the way I interpret it at least. I hung out with a friend who's an actual football fan for Superbowl and I brought snacks since I couldn't offer any meaningful commentary. I actually tried for a couple minutes... However my friend was not impressed with me enthusiastic "he's happy because he pushed that other guy down!" and "he touched the ball so now he's gonna slap that other guy's butt!" comments. I can wax poetic about many things but football is not one of them.

GREEN SAUCE

My friend Devin makes this wonderful cross between salsa verde and guacamole that I love. I can say it's my fried chicken. I love dips. I love chips. I love avocados. This green sauce is like a trifecta of all three things in one! What's not to love. So for my Superbowl get together I decided to try to make my own version of a green sauce. I think Devin's has tomatillos in it... I didn't go that route. The end result was refreshing and "more-ish."

MORE-ISH (adj)- So delicious that one can't help but eat more, and more, and more....

  • cilantro
  • parsley
  • garlic
  • onion
  • avocado
  • EVOO
  • jalapeno
  • salt
  • pepper
  • lime juice

Special tool- food processor. Basically I put all that stuff in the food processor and pulsed it til I got the consistency I wanted. Although in the end I used it as a dip- as the name implies- it's more like a sauce. Loved it! Later today I will make a hasselback potato and pour the leftovers on top!

The hardest part was the clean up!

MEDITERRANEAN TURKEY MEATBALLS

I'm not 100% sure why but I associate meatballs with sports watching. In my mind's eye it's usually old school crockpot meat balls of the Swedish variety. I, of course, couldn't just do that. I had to make it kind-a fancy. Once again I got the recipe from TheKitchn. The dipping sauce is a basic Greek yogurt dip and the meatballs are leaner with the use of ground turkey and lentils as a filling base.

From John Stamos to your stomach...

Adding some flavor with lemon (zest and juice), garlic, and dill.

Inside the meatballs: ricotta, feta, egg, garlic, olives, lemon zest, dill and onion.

 Also, smashed green lentils.

Put everything in the bowl and get your hands dirty!

Once mixing the ingredients together you let the flavors meld for 15minutes... also known as preheating your oven time. Shape the meat mixture into spheres and bake at 375 for about 20min.

 Tasty balls in your mouth!

Sweet and Savories

Hey ya'll! Happy 2013! I took some time off and out of the kitschen. Now at the end of January, I'm just getting back into the swing of things. Work with me here peeps. I'm a bit rusty. So I'm taking things slowly and keeping it simple. No candy thermometer. No homemade caramel. Just some basics re-worked into new tasty treats.

On direct side effect of me not being in the kitschen is that the cupboards were not fully stocked. I didn't really go grocery shopping for almost the whole month! When I finally got inspired and energized enough to make something I picked out a chickpea recipe I'd been wanting to make for a while. I know I'm usually going on and on about sweet things I like. But seriously folks. When it comes to savory I loves my chickpeas. Mainly, I love hummus. But you know... I had already been eating hummus and veggie like they were a full balanced diet so I needed to switch it up a bit. This dish of braised coconut spinach chickpeas is another treat from the people at the Apartment Therapy family. Although it took me longer to make than the estimated time (I just couldn't get that can of coconut milk open for the life of me.) it was a pretty quick weeknight dinner.

I got my cutting board out and started my mes.

My secret weapon? Micro-plane for the lemon zest and ginger!

Add a little fat to a hot pan and saute til onions soften and things become fragrant.

Drain the chickpeas and add them to the pan.
Toss/stir til those beans are coated with yummy stuff.

Slowly add in spinach leaves and wilt them. After all the spinach is
wilted add the coconut milk, lemon juice, and ginger powder.
Simmer and let the flavors come together.

Uhhhh..... I molded my rice and wanted to take a purty picture but I was too hungry. So instead you get to see my last couple of bites.

Getting back in the kitschen felt so good I kept at it. The next day I decided to tackle a dessert. My mother doesn't share my love for decadently sweet desserts. This means that unless I want to eat a whole pan of brownies myself (but really, who doesn't?!) I have to make some compromises when making desserts for the sake of baking. However, she does love pistachios. She really loved the dark chocolate pistachio cookies I made not too long ago. I wanted to do something new though... and I took the half bag of pistachios we had in the kitchen and got to work. I made La Fuji Mama's mini-pies!

I say it every time.... if you can get pre-shelled pistachios do it!

Because I spent so much time shelling nuts,
I thought it was okay to use store bought crust.

I used a mini-fondant cutter to make florets to top the pies.

The liquid is part honey, an egg, milk, and sugar.

To assemble press the dough into your muffin tin. Add a bit of pistachios, a little of the honey mixture, some more nuts, a little more honey and top with the crust floret. Bake for about 20 minutes and you get this:

My mom didn't want me to take a "candid" shot of her enjoying her dessert.... but she did agree to hand model the pie for a cross section photo!

I was on a roll! So a couple days later I made it a trilogy. This time I didn't really have a recipe. Only an idea and a few leftovers in the kitchen. Originally I thought I'd be able to stretch the packaged pie crust to make these Indian spiced meat and vegetable pockets... errrr faux samosas (fauxmosas?). Like many good intentions that one lead to Hades. So I HAD to make the dough from scratch. I made a basic pie crust (extra cold butter, flour, salt, and ice cold water) and added a little ground pepper to the mixture. While the dough was chilling in the fridge I peeled and cut two potatoes. As the potatoes boiled I chopped up a shallot I had laying around and some garlic. I sauteed those things in a skillet and put them in a big bowl.

As I moved forward in this multi-tasking process I thought... mom's gonna want some meat. I took a bit of ground turkey and began browning it in the same skillet I'd sauteed the garlic in. By this time the taters were tender so I drained them and added me to the big bowl to cool. Once the turkey was browned and crumbled I drained the grease and seasoned it. I had a bit of left over Masala spice mix from when I made homemade chai last holiday season. I put that on the meat along with a little salt and pepper. I had some left over spinach leaves so I added that to the meat and let them wilt as it cooled.

With all the basics of the fauxmosa filling cooled I began to add it all together. In the big bowl I hard: sauteed garlic and shallot, ground, browned and seasoned turkey and potato cubes.... I then added a little more Masala spice, some EVOO, a little crushed ginger, and a handful of frozen peas. I mixed it all together and let it sit while I rolled out the pie dough. I used circular cookie cutters because it was easy. I spooned a little of the meat mixture into the center of on disc, rubbed a little milk around the edge and sealed another disc ontop. I crimped the edge with a fork and sprinkled come caraway seeds on top. I put the fauxmosas in the over at 350 for 20 minutes.

Happy family... this is my fauxmosa filling.

Yeah... I made that. Not the chutney though.
That came from the Indian grocer.

 FAUXMOSAS
  • shallot, chopped
  • 2 bulbs garlic, chopped
  • handful of spinach leaves
  • 2 potatoes, cubed and boiled til fork tender
  • 1/2 c frozen peas
  • 1 tsp Masala spice mix/curry powder
  • 1/2 tsp fresh ginger, grated
  • ground turkey, browned and crumbled
